The Oak forests chosen for the 2007 VOFT Series are Identified on the label as 1, 2 & 3.

All our barrels are coopered to a strict style to maintain consistency of product, trial parameters and the highest level of quality.The Oak staves used for our barrels are seasoned in the country of origin for 36 months before assembly into standard 228L Burgundy export barrels undergoing a medium toast and toasted heads.  We insist on a super fine grain <1.5mm between growth rings and the strictest level of quality control.

Forest 1: Nevers Forest in the Centre of France chosen for its elegance, finesse and delicacy that it can provide through aromatic oak lactones subtle spice and its ability to aid and lift fruit integration whilst providing structurally sound tannins.

' Nevers Forest'

Forest 2: Minnesota forest Northern America chosen for its tight grain from its cold climate and its boldness as American Oak.  Commonly know as white oak American oak differes from French Oak as a different species Quercus. Alba where the French species is Quercus. Sessils. White oak provides a solid tannin structure giving liveliness as well as providing pronounced oak lactones of Vanilla, cedar and spice, which can add to the power and body of a wine.

Wines:

Forest 3: Caussian forest Russia chosen for its contrast as the 'tighter' nautral oak being the same species grown throughout Europe but which is subjected to much colder temperatures resulting in a much tighter grain than its American & French siblings.  Being a tighter grain it should provide a more balanced structure and restrained influence of Oak lactones compared to Minnesota Oak.
