| Palate: | Full bodied wine with fruit characters of blackcurrant, blackberry, boysenberry, red currants, coconut and aniseed. The wine has balanced acidity with pronounced and gripping woody tannins of cedar, pine and coconut. The wine has a lean smooth lingering finish. |

| Cellar: | Up to 15 years; wine will mature to a soft brick red with more developed fruit characters of blackberry and prune, with some chocolate, coffee bean characters and more bold tannin and wood structure of cedar, spice, cigar box, tobacco and earth notes. |

Winemaking:
The 2007 C1 Cabernet Sauvignon was handpicked in Mid April before gentle crushing and fermentation with AWRI796 yeast for 14 days before basket pressing. The wine was then racked to new St Martin French Oak Barrique from the Nevers’ forest in France to undergo Malo lactic fermentation and further maturation for 18 months. The wine was gently racked and neither fined or filtered prior to bottling.
