Colour: Deep red purple with a purple magenta rim
Nose: Aromas of black currants, blackberry, boysenberry, tobacco leaf, aniseed, liquorice, tar, capsicum, herbs and spice, with hints of vanilla bean and coconut.

Palate: Full bodied wine with fruit characters of blackcurrant, blackberry, boysenberry, red currants, coconut and aniseed. The wine has balanced acidity with pronounced and gripping woody tannins of cedar, pine and coconut. The wine has a lean smooth lingering finish.
Cellar: Up to 15 years; wine will mature to a soft brick red with more developed fruit characters of blackberry and prune, with some chocolate, coffee bean characters and more bold tannin and wood structure of cedar, spice, cigar box, tobacco and earth notes.

Winemaking:

The 2007 C1 Cabernet Sauvignon was handpicked in Mid April before gentle crushing and fermentation with AWRI796 yeast for 14 days before basket pressing.  The wine was then racked to new St Martin French Oak Barrique from the Nevers’ forest in France to undergo Malo lactic fermentation and further maturation for 18 months. The wine was gently racked and neither fined or filtered prior to bottling.

Recommended Drinking 2013-2028.

2009 Sauvignon Blanc

Colour: Bright pale straw with a light green hue
Nose: Delicate and aromatic aromas of passionfruit, kiwifruit, straw, tropical fruit and jasmine flower. ..
Palate: Bursting with crisp tropical fruit, lean acidity, mineral notes, jasmine, creamy texture from lees stirring, leading to a crisp yet smooth dry finish.
Cellar: 2009-2013, delicate aromatic dry white suited to short term cellaring.
Composition: Alcohol: 12.5% alc/vol

Winemaking:
The 2009 Yarra Valley sauvignon Blanc was had picked in March and processed by crushing and holding on skins for 6 hours at low temperature to allow natural aromas and flavours to increase and develop in the juice from gentle contact extraction with the skins. The grapes where then air bag pressed and the juice chilled for settling and clarification prior to ferment. The juice underwent a cold fermentation in stainless steel tanks with aromatic yeasts before 8 weeks on lees post fermentation to develop a gentle creamy texture, the wine was then gently fined before filtration and bottling.

Drink now until 2013

2005 Rose

Nose: Delicate aromas of strawberry, toffee apple, raspberry and cream.

Cellar: 2009-2013, delicate aromatic Rose suited to short term cellaring.

Winemaking:

The 2008 Rose was made from 60% Cabernet Sauvignon and 40% Merlot, the grapes were crushed together and held on skins to extract colour and red berry flavours before airbag pressing. The juice was then cold settled and racked before cold fermentation followed by short-term maturation on lees before gentle fining and filtration prior to bottling.
Drink now until 2013.
