Tasting Notes 3/5/08

VOFT S1 ‘Nevers’ Forest France Yarra Valley Shiraz

Deep brilliant red in colour with a bright magenta rim.  The nose is loaded with red cherry, raspberry, blood plumand soft jubes, underlaid with hints of eucalypt, pine, fresh coconut oak.The palate is medium weight with spicy oak, white pepper, cherry and jubes; the tannins are slightly puckered yet finein texture, the palate is very lean and elegant with coconut and cedary oak flavours followed with a soft lingering finish.

VOFT S2 ‘Minnesota’ Forest America Yarra Valley Shiraz

Deep red purple with a pink rim.  The nose shows aromas of dried strawberries, vanilla bean, menthol,aniseed, marshmallow, cherry liqueuer and green tobacco.The wine has a lively intense palate of cherries, plums and red berries supported by soft supple chalkytannins; a full fruit intense finish supported by vanilla pod oak flavours and spice.

VOFT S3 ‘Caussian’ Forest Russia Yarra Valley Shiraz

Dark red with a purple magenta rim.  Purfumed cedar, coconut, caramel, red cherry, camphor, on the nose
displaying a real coolness and power of intensity.  The palate showed intense fruit concentration of cherry,
cherry liqueuer, raspberry, cedary wood tones, menthol and camphor underlaid with fine gripping tannins.
The wine displayed excellent structure and length of flavour, with good complexity and oak fruit integration.

VOFT C1 ‘Nevers’ Forest France Yarra Valley Cabernet Sauvignon

Deep red with a pink rim.  Nose is fragrant of blackberry, cassis, eucalypt, coconut, christmas pudding,marzipan, vanilla custard, capsicum and methoxypyrazines.The palate showed a lifted acid structure supporting lively fruit intensity of cassis, blackberry and boysenberryfruits with a slight tarty rhubarb, palate is very lean and tight structured with cedary wood flavours, subtle spice,fine gripping tannis and good length.

VOFT C2 ‘Minnesota’ Forest America Yarra Valley Cabernet Sauvignon

Deep red with a purplish rim.  Blackberry liqueuer, cassis, bittersweet dark chocolate, aniseed, fruitcake, glace` cherry, berry and spice on the nose.The palate is a rich textured mouthfilling wine showing fruit flavours of blackberry, fruit mince pies, and a meatysavouriness.  Gripping grainy tannins give length and weight to the fruit and support a creamy texture with vanillabean and spicy oak flavours followed by a rich smooth finish.

VOFT C3 ‘Caussian’ Forest Russia Yarra Valley Cabernet Sauvignon

Deep red with a purple red rim.  The nose displays intense cedar sawdust and cassis fruit, capsicum, green tobacco,cherry, spice, red currants, aniseed and soft licorice.The palate showed lifted berry, blackberry, cassis fruit flavours to the fore supported by well structured silky, chalkytannins layered beneath the fruit seem to help lift intensity and length on the palate; soft sawdust and cedar woodtones some spice excellent length of flavour and a balanced full finish.
